Centuries ago, meat was actually outlawed in Japanese society. Around the year of 752 A.D., one of Japan's Empresses, Empress Koken, set out a decree that even banned fishing. While this decree may have seemed harsh at the time, there were others that seemed even more outlandish. During 927 A.D., a regulation was set forth that any member of the Japanese government that participated in the act of eating meat would be deemed as unclean for three days time. This meant that they could not participate in Imperial Court's Shinto celebrations. In today's Japanese culture, eating meat is prohibited, except in some religious situations. Japanese sushi is a popular option.

While foods that are eaten have changed over the years, many of the modern day Japanese dishes still contain influences that have long been found in Japan. You need to put in the garlic, 1 tablespoon extra virgin olive oil, and vinegar into a bowl with the tomatoes. Now use this mixture to coat one side of each slice of baguette and place on a cooking sheet with the olive oil side down.

You want to toast this Italian cooking recipe just for a couple of minutes until the bread turns golden brown, then score the bread and rub some garlic in the slices. Drizzle some olive oil on both sides, place the tomato topping on and cook again until browned. This recipe is delicious and you will impress all your friends with it.

Some of these hucksters claim to make the water into clusters" that are larger, smaller, or hexagonal-shaped, allowing them to more readily promote "cellular hydration" and remove "toxins" from your body.

The fact is that none of these views has any significant support in the scientific communities of chemistry, biochemistry, or physiology, nor are they even considered worthy of debate. The only places you are likely to see these views advocated are in literature (and on Web sites) intended to promote the sale of these products to consumers in the notoriously credulous "alternative" health and "dietary supplement" market.

To qualify as spring water, it must be collected only at the spring or through a borehole tapping the underground formation feeding the spring. If the collection process uses some type of an external force, the water must be from the same stratum as the spring and must retain the quality and all of the same physical properties of water that flows naturally from a spring to the surface.

Purified Water: This is a type of drinking water that has been treated with processes such as distillation, deionization or reverse osmosis (we'll get to those terms later). Basically, this just means that the bacteria and dissolved solids have been removed from the water by some process, making it "purified." This type of bottled water is usually labeled as purified drinking water but can also be labeled for the specific process used to produce it, for example, reverse osmosis drinking water or distilled drinking water. Lots of bottled water brands are only purified drinking water in real sense.

Mineral Water: Okay, ready for some science? Mineral water contains not less than 250 parts per million total dissolved solids and is defined by its constant level and relative proportions of mineral and trace elements at the point of emergence from the source. No minerals can be added to the water.

FDA is publishing regulations on water filled in bottle that will promote honesty and fair dealing in the marketplace by providing standard definitions for the terms "artesian water," "ground water," "mineral water," "purified water," "sparkling water filled in bottle," "spring water," "sterile water" and "well water." They also bring mineral water under existing quality standards for
water filled in bottle.

Bottled water, like all other foods regulated by FDA, must be processed, packaged, shipped and stored in a safe and sanitary manner and be truthfully and accurately labeled. Bottled water products must also meet specific FDA quality standards for contaminants. These are set in response to requirements that the Environmental Protection Agency has established for tap water.

The new regulation sets standard definitions for different types of bottled waters, helping to resolve possible confusion about what terms like "spring" and "ground" water really mean.

For example, "spring water" is now defined as water collected as it flows naturally to the surface, or when pumped through a bore hole from the spring source. The water which comes from the bore hole must be similar to that which comes from the spring's natural orifice. The regulation allows labeling to explaing that how the water came to the surface, as for example, it naturally flowed to the surface, not extracted etc."

The regulation also requires mineral water to meet the bottled water quality standards. It must come from a protected underground source and contain at least 250 parts per million in
total dissolved solids. Mineral water had previously been exempt from standards that apply to other bottled water.

Apart from explaining various terms, the regulation addresses different other labeling concerns. For example, water bottled from municipal water supplies must be clearly labeled as such, unless it is processed sufficiently to be labeled as "distilled" or "purified" water.

The regulation also requires accurate labeling of water filled in bottles marketed for infants. If a product is labeled "sterile" it must be processed to meet FDA's requirements for commercial sterility. Or else, the labeling must show that it is not sterile and can be used in preparation of infant formula only as per the physician or by following the instructions of infant formula preparation.

Like all foods, beverages must also be safe and truthfully labeled. However, if the water ingredient is highlighted in any way, that water must meet water filled in bottle standards.

A proposal on this subject was published on Jan. 5, 1993. The comment period was extended twice -- once to allow a trade group to conduct a survey on the meaning of "spring water" and later to allow comment on two surveys that were submitted to FDA.

FDA received more than 430 comments, most of which were supportive of the proposal.
The rule becomes effective six months after being published in the Federal Register.

De-gassing of a sparkling mineral water reduces its dissolution potential, but the total levels are still relatively low, suggesting that carbonation of drinks may not be an important factor per se in causing dental erosion.

Intake of carbonated beverages has not been associated with increased bone fracture risk in observational studies, and the net effect of carbonated beverage constituents on the amount of calcium in the body is negligible, leaving carbonated water as harmless as regular water

Water that comes from the ground - usually from artesian wells - and passes through layers of minerals containing some form of carbonates may absorb the carbon dioxide gas released by the carbonates. This water is known as natural sparkling water. If the water also picks up sufficient quantities of various minerals to impart a flavor to the water it becomes sparkling mineral water.

Carbonation can be naturally induced into beverages by fermentation. Fermentation occurs when yeast, either wild or cultivated, is introduced into a liquid containing almost any form of sugar. The yeast converts the sugar into alcohol and carbon dioxide gas. When the gas is absorbed by the liquid as a result carbonated alcoholic drink is produced. If the fermentation is done in an airtight container, the carbon dioxide gas will saturate the beverage and it will be carbonated. Many carbonated beverages were originally made through this type of naturally induced carbonation including beer, wine and early types of soda.

Today the exclusive method of making soda and several commercial beers is by the introduction of carbon dioxide gas under pressure. The first uses of artificially induced carbonation date back over 250 years and were done to improve the drinking quality and preservation of water.

In the United States we have many references to carbonated beverages. People frequently ask for these specific product including 7-UP Coke or Pepsi,. Sometimes it is more general, like ginger ale or root beer. Then there are regional nicknames which include soda, pop, soft drink, tonic, seltzer, sweetwater, carbonated beverage, sparkling water and fizzwater.

Cocktail conducted a side-by-side tasting of several carbonated beverages. Among the reviewing criteria were: crispness, flavor, clarity and fizz release. Carbonated water, also known as sparkling water, and seltzer, is plain water into which carbon dioxide gas has been dissolved, and is the major and defining component of most "soft drinks". Carbonation is the process of dissolving carbon dioxide gas into water. It results in the formation of carbonic acid (which has the chemical formula H2CO3).

Earlier, soda water, which was also known as club soda, was made in home by "charging" a refillable seltzer bottle which allowed filling it the water and then mixing carbon dioxide. Club soda may be identical to plain carbonated water or it may contain a small amount of table salt, sodium citrate, sodium bicarbonate, potassium bicarbonate, potassium sulfate, or disodium phosphate, depending on the bottler. These additives are included to emulate the slightly salty taste of homemade soda water. The process can also occur naturally to produce carbonated mineral water, such as in Mihalkovo in the Bulgarian Rhodopes.

Sparkling mineral water is a negligible cause of dental erosion. While the dissolution potential of sparkling water is greater than still water, levels remain low: by comparison, soft drinks cause tooth decay at a rate of several hundred times that of regular sparkling water. De-gassing of a sparkling mineral water reduces its dissolution potential, but the total levels are still relatively low, suggesting that carbonation of drinks may not be an important factor per se in causing dental erosion.

Intake of carbonated beverages has not been associated with increased bone fracture risk in observational studies, and the net effect of carbonated beverage constituents on the amount of calcium in the body is negligible, leaving carbonated water as harmless as regular water

Club soda has a higher sodium content. Virtually same thing.


Water that comes from the ground - usually from artesian wells - and passes through layers of minerals containing some form of carbonates may absorb the carbon dioxide gas released by the carbonates. This water is known as natural sparkling water. If the water also picks up proper quantities of different minerals and gets a new taste then it turns into sparkling mineral water.

Carbonation can be induced naturally into the beverages by fermentation. Fermentation occurs when yeast, either wild or cultivated, is introduced into a liquid containing almost any form of sugar. The yeast converts the sugar into alcohol and carbon dioxide gas. When the gas is then absorbed by the liquid a carbonated alcoholic beverage is the result. If the fermentation process is performed in an airtight container, then it will be carbonated because the carbon dioxide gas will saturate the beverage. Many carbonated beverages were originally made through this type of naturally induced carbonation including beer, wine and early types of soda.

Today the exclusive method of making soda and several commercial beers is by the introduction of carbon dioxide gas under pressure. The first uses of artificially induced carbonation date back over 250 years and were done to improve the drinking quality and preservation of water.

In the United States we have many references to carbonated beverages. Generally people request for a specific product name such as coke, pepsi or 7-up. Sometimes it is more general, like ginger ale or root beer. Then there are regional nicknames which include soda, pop, soft drink, tonic, seltzer, sweetwater, carbonated beverage, sparkling water and fizzwater.

One thing to remember about adding any carbonated liquids to cocktails: generally they are added last. The only exception is if the drink is topped with a float of spirit. Do not shake a mixture with soda; this will cause the beverage to go flat and lose most of its effervescence. If the drink calls for blending you may chose to shake the other ingredients with ice first then combine in serving glass with seltzer and gently stir.

Basically, it's water and carbon dioxide. Sparkling mineral water is a naturally-occurring carbonation, as described above. Thomas Henry produced the first forced carbonated water using an apparatus that utilized a pump to impregnate water with fixed air. In 1794, a jeweler in Geneva made a similar device to produce a highly carbonated artificial mineral water. His name was Jacob Schweppe.

Cocktail conducted a side-by-side tasting of several carbonated beverages. Among the reviewing criteria were: crispness, flavor, clarity and fizz release. We found that Perrier, a sparkling natural mineral water, maintained its fizz the longest, especially its lemon and lime flavored varieties. Schweppes Seltzers and Canada Dry came in a close second.

For those who find seltzer to be a bit harsh, club soda is a kinder, gentler fizz water. As part of our tasting we found club soda to be much milder and slightly sweeter tasting than standard carbonated water. The main difference is the introduction of potassium bicarbonate and potassium sulfate, which dulls the sharp burn of effervescence.

Club soda, sparkling mineral water, seltzer and carbonated water have no calories, which make them a dieters alternative for 7-UP, Mellow Yellow, Mountain Dew and tonic water.

Tonic water consists of sugar, carbon dioxide, water and quinine. Quinine was added to the tonic water to help cure or prevent malaria. It comes from the bark of the Cinchona tree that grows in the rain forest on the eastern slopes of the Andes. To make the tonic water more tasty, it was normally mixed with gin and lime or lemon.

If you run out of tonic water but still have seltzer, 1/4 lemon, 1/4 lime and 2 tbs. sugar you can make a passable substitute.

The Myths About Different Water Types

Sparkling water is just one of all bottled water types  sometimes referred to as "spring water" but that's not really accurate. The processing and origin of various types of bottled water really make them little different in taste and content. In fact, the U.S. Food and Drug Administration (FDA)-the federal agency that regulates all types of bottled water-has established guidelines called standards of identity that classify bottled water into several different water types:

Spring Water: Ah, the ever-popular "spring water" is defined as bottled water derived from an underground formation from which water flows naturally to the surface of the earth. To qualify as spring water, it must be collected only at the spring or through a borehole tapping the underground formation feeding the spring. If the collection process uses some type of an external force, the water must be from the same stratum as the spring and must retain the quality and all of the same physical properties of water that flows naturally from a spring to the surface.

Purified Water: This is a type of drinking water that has been treated with processes such as distillation, deionization or reverse osmosis (we'll get to those terms later). Basically, this just means that the bacteria and dissolved solids have been removed from the water by some process, making it "purified." This type of bottled water is usually labeled as purified drinking water but can also be labeled for the specific process used to produce it, for example, reverse osmosis drinking water or distilled drinking water. Many bottled water brands are actually purified drinking water.

Mineral Water: Okay, ready for some science? Mineral water contains not less than 250 parts per million total dissolved solids and is defined by its constant level and relative proportions of mineral and trace elements at the point of emergence from the source. No minerals can be added to the water.
Sparkling Bottled Water: Yes, the fizzy kind. But what makes it fizzy? This type of water contains the same amount of carbon dioxide that it had when it emerged from its source. Sparkling bottled waters may be labeled as sparkling drinking water, sparkling mineral water, sparkling spring water etc.
Artesian Water/Artesian Well Water: Ready for some more science? Artesian water comes from a well that taps a confined aquifer-a water-bearing underground layer of rock or sand-in which the water level is above the top of the aquifer.

Well Water: This one is pretty easy. Well water is exactly what it sounds like- water from a hole made in the ground that taps the water source.

Municipal/Tap Water: Of course, you know it's the type of water piped right into your home. While tap water isn't regulated by the FDA (but we thought it should be included here), it must meet the strict standards of the Environmental Protection Agency (EPA). Municipal tap water is generally of excellent quality, however, many people prefer the taste and enjoy the convenience of bottled water, which, in most cases, undergoes additional processing and often retains the pleasant characteristics of its natural source.

Bottled Water Regulation: The FDA is responsible for the food and pharmaceutical industries, two industries where safety and quality are of paramount importance. And as expected, The FDA is packed of serious customers. Therefore, bottled water is one of the most extensively regulated packaged-food products. The bottled water industry receives government oversight from federal and state agencies across the country, providing consumers with multiple layers of safety assurance - from the finished water product back to the source. Bottled water is required to be tested for the same parameters as tap water, but the standards are, in some cases, stricter than for tap water. State governments inspect and certify the "sources" of spring water, meaning that samples have been analyzed and found to be of a safe and sanitary quality according to regulation.

Issue of Sodastream (Soda Club)

In the year 2006, Sodastream (Soda Club) tried to deny a different enterprise to refill “their” bottles of carbonic acid, claiming that the bottles were their assets and it did not belong to the customer (through contracts which all customers had to agree to).
This didn’t work in Germany, and this could very well become the norm in most countries.This niche really does need competition, both for the sake of the environ­ment (bottles should be refilled in the store, an operation that takes a mere 20 seconds), and for price, which could easily be cut in half.  Still, one should consider that sparkling water made at home already costs but a fraction of store-purchased carbonated beverages, but things could be a lot better.

Düsseldorf Higher Regional Court confirms immediate enforceability in the Soda-Club case

Soda-Club GmbH, Wiesbaden (“Soda-Club“) may not use its dominant position abusively. Soda-Club had prevented competing suppliers from refilling Co² cartridges for water carbonating machines by claiming its ownership of the cartridges.

In February 2006 the Bundeskartellamt prohibited this conduct. Soda Club opposed the Bundeskartellamt’s immediately enforceable decision by applying to the Düsseldorf Higher Regional Court for interim measures. In provisional proceedings the court has now confirmed the Bundeskartellamt’s decision in all material respects. Soda-Club is dominant in the market for refilling CO² cartridges. Hindering competitors from refilling CO² cartridges represents an abuse of this dominant position. By this conduct Soda-Club prevents consumers from taking advantage of alternative refilling possibilities. Only the obligation to point out on labels on the company’s own cartridges that it is admissible to have them refilled by competitors was seen by the Higher Regional Court as a disproportionate measure.

Although Soda-Club can still appeal against the Higher Regional Court’s decision to the Federal Supreme Court, the Higher Regional Court’s decision implies that the numerous small and medium-sized bottling plants can now start to compete with Soda-Club and refill all cartridges circulating in the market.

Sodastream: A Brand Of Home Carbonation Systems

SodaStream is the name of a brand of home carbonation systems that was invented by Guy Gilbey in 1903. Later versions allowed the addition of concentrates to create carbonated flavored beverages. It was popular in the 1970s and 1980s when there were a number of brand name syrups available, and, after the company merged with Soda-Club in 1998, it was relaunched with an emphasis on healthier drinks.

In the UK (where it was first sold) the SodaStream machine is strongly associated with late-1970s/early-1980s childhood nostalgia.

The SodaStream drinks maker is a device which can force carbon dioxide gas (stored under pressure in a cylinder) into water, making it fizzy. The product includes a machine, a carbon dioxide canister, and one or more reusable beverage bottles (suitable for pressurizing). The bottle filled with water is threaded onto the machine and after a button push, compressed CO2 from the canister is injected which creates sparkling water (known as seltzer too). Various types of concentrated syrups are available, in order to create diet or regular soft drinks with adding a less amount of concentrate into the water bottle after carbonation. Once a canister is empty, it is returned to a supplier and a new canister is purchased.

By using the appropriate variety of concentrate, different flavours of soft drinkcan be created. During its heyday, several famous brands were available in SodaStream concentrate form including Tizer, Fanta, Sunkist and Irn-Bru.

Milkstream was a variation on the SodaStream for making milkshakes, created by the same company. The ingredients (milk, ice cream and Crusha syrup) were mixed in a tall glass and inserted into the machine, so that the wand extended into the glass to froth up the shake.

The forerunner of the machine, the "Apparatus for aerating liquids", was created in 1903 by Guy Hugh Gilbey of the London gin distillers, W & A Gilbey Ltd., and was sold to the upper classes (including the royal household). Flavored concentrates such as cherry ciderette and sarsaparilla, were introduced in the 1920s, along with commercial carbonation machines, and the first machine for home carbonation of drinks was produced in 1955. For the most part, weight management and nutrition headlines are driving consumer interest and demand for healthy snack foods, with 62% of consumers saying they eat foods to prevent or manage health conditions and 42% are seeking snacks with health benefits. Yet industry leaders add that the more indulgent treats still comprise two-thirds of all sales.

Sam's Club has been a leader in the snack food industry by aligning themselves with environmentally friendly and healthy foods manufacturers. "We will favor suppliers that meet our standards for sustainability," explains Heather Mayo, VP of merchandising. She said consumers want healthy snacks, energy boosters, portion-control sizes, on-the-go products and increased levels of social responsibility. "Consumers are more educated than ever," she added.

Additionally, there has been a snack food industry evolution as far as ingredients go. On everyone's mind at this year's SNAXPO (snack exposition), they discussed how to lower trans fats and alter plant genetics to improve the nutrition and flavor of their food snacks. "We have gotten rid of trans with low levels of saturated fat without sacrificing stability, flavor and shelf life," she said. Have you ever wondered how those corn kernels turn into popcorn? Like the name suggests, popcorn is simply corn kernels that have popped through heating and converted into popcorn.

When corn is cut off the cob, it is stored and preserved. Each kernel has a little water or moisture locked inside of them. So when you start to heat the popcorn the pressure builds up inside the corn to the point where it has no where to go. The moisture inside the kernel converts into steam and the pressure increases exponentially. The pressure builds up and the starch starts to expand to the point where the kernel explodes. And through this explosion our tasty popcorn is born.

When the conr is harvested its moisture content is 16-20%. After harvesting the corn it must be dried so that it only contains 12-15% of water.

Not every corn pops. Different varieties of corn have different levels of moisture content or water storage capabilities. Too little water results in no popcorn. popcorn is formed through the expansion of water into gas which increases the pressure in the corn. The pressure needs to be released which subsequently gives birth to the tasty popcorn.

The anatomy of the corn kernel is quite simple. The corn kernel contains 3 main parts which play a significant role in the production of popcorn. The pericarp, which is the hull or simply the outer covering, the germ which is the part that sprouts and the endosperm which contains the starch that expands.

So how does the popcorn withstand the build up of pressure? As mentioned above, corn has a strong pericarp which is the outer covering. This strong, protective layer acts like a seal, just like a sealed plastic bag would inflate when micro waved. The steam within this cover builds up to the point where it expands and eventually explodes. Prior to heating or cooking, if the pericarp has been cut or damaged the steam will be vented resulting in no popcorn.

The expansion or popping of the corn takes place in the tightly packed endosperm. The greater development of the endosperm results in bigger and tastier popcorn. Once the pressure builds up to about 9 atmospheres, the pericarp or the shell of the corn explodes. The gelatinized starch granules found in the endosperm do not explode, but expand into the cooler room temperature and solidify into the thin, fluffy like bubbles that we call popcorn.

Different varieties of corn have been genetically engineered for the purpose of producing popcorn. The white and yellow hull-less are the most common. As soon as the kernel contains 10-15% of moisture it can be used to produce popcorn.

Winstanley cats make the purrfect pets


I bought my first Winstanley cat at an antiques and curios fair fifteen years ago. It was a tabby kitten which bore an uncanny resemblance to my own live cat. I then spent many happy weekends searching for the Winstanley kitten’s mother. Eventually I found her reclining with another tabby kitten which was very cute, but in a different pose.

Soon I had collected the whole family; the father, playful cats, winsome cats, cheeky cats, crazy cats – all tabbies!

Then I rescued a ginger cat from the local cat sanctuary and just had to start collecting ginger Winstanley cats too.
